St. Patrick’s Day is right around the corner and what better way to celebrate than to make a scrambled green egg sandwich. The kids will love it!

Scrambled green egg sandwich

Ingredients:

  • 4 large eggs (or 1 cup egg substitute)
  • 1/4 cup chopped green pepper
  • 6 Tablespoons water
  • 1 Tablespoons finely chopped green onions
  • 1/2 teaspoon green food coloring
  • Cheddar cheese
  • Two slices of your favorite Cellone’s sliced bread
  • Ham or bacon whichever you prefer

How to make the scrambled green egg sandwich:

First, grab a cup then stir the water and food coloring together. Set aside.

In a lightly greased frying pan barely coated with olive oil, sauté the green pepper until tender. The green peppers will really bring out the green color for the final product.

In a medium bowl, beat eggs well. When color is uniform, add food coloring mixture and beat vigorously.

Lower heat to medium-low. Then add egg mixture to green peppers. Cook slowly, breaking and scrambling the setting egg often as they cook.

While you are cooking the eggs you can get the ham or bacon started as well, so they finish around the same time.

Transfer the eggs and whichever protein you decided to cook to the serving plate then sprinkle each portion of the scrambled eggs with finely chopped green onion and some cheddar cheese.

Finally, you can add your green eggs and protein to your Cellone’s bread to make the perfect St. Patrick’s Day sandwich. Enjoy!
